Taco Beef and Rice Taco Beef and Rice

I cook with ground meat about once a week.  It’s tasty and easy to work with especially when you want to make a protein packed meal.  This weekend I started to make one of my standard ground beef and rice mixtures, maybe a bit boring, until I was inspired by something my husband said to me the other day.  He shared with me that his Mom use to make a Spanish Rice type dish.   Hmmmm Spanish rice.  Then I got my MoJo going and headed to the pantry and here is what the results were.

Quick and Easy recipe. Can be used as a main dish, side dish or with tacos. It is surprisingly tasty and is packed with protein and flavor. Nice thing is most of what you need can be pulled from your pantry.
Ingredients
  • 1 pound Ground Beef
  • ½ pound Ground Pork
  • 1 Jar of Salsa
  • 1 Packet of Spicy Chili Seasoning (try Simple Organic)
  • 1 cup uncooked rice (prepare per package directions)

Instructions
  1. Cook ground pork and beef in a large skillet on medium high until lightly browned
  2. Add Chili Seasoning packet and stir into meat so that it is evenly distributed
  3. Add Salsa to skillet and fold into meat, continue to cook for 2-3 minutes
  4. Add rice to skillet fold into meat mixture, warm for 2 more minutes
  5. Serve and Enjoy!

Notes
This was so yummy and can be spiced up with hot Salsa. Use this as a Taco or burrito filler. My family, we just ate it in a bowl with a salad. I considered adding some vegetables while I was sautéing the meat and I think I may next time I make it. But if you need quick and easy, the recipe above is just that. Enjoy!

I used Simple Organic Spicy Chili Seasoning MixNewman’s Own Medium Salsa and Organic Long Grain White Rice.

      Hi Ramona. This is a very easy meal to make too. Many times I have extra cooked rice in my fridge and therefore it cuts the time to cook down. This can also be used as a filler for tortillas. Sometimes I serve it that way to my boys and I just have the filling in a small bowl.
