I found this on Whole Foods Website. I have become a quinoa cooking fanatic as it's a complete protein with all essential amino acids and very high in protein. I have made this recipe several times and not only does it look beautiful, people love it! I made it first for Thanksgiving but now make it when I am baking a chicken or roasting a meat. I'm making it next week for Easter as well - it's beautiful as a side dish. I am not a huge squash lover but the quinoa stuffing makes a perfect combination of delicious! It does take some time to assemble and cook but - it is even better as a left over so I often double the recipe. This recipe combines favorite fall vegetables with one of our favorite gluten-free grains. Use both white and red quinoa for a rich autumnal color. |
