This delicious Baked Ziti recipe was on Published March 1, 2009 by Cook's Illustrated. I have to say it is the best Ziti I have ever made. I typically "wing" my baked pasta dishes and maybe that is why they are different every time. This recipe is right on! The test kitchen prefers baked ziti made with heavy cream, but whole milk can be substituted by increasing the amount of cornstarch to 2 teaspoons and increasing the cooking time in step 3 by 1 to 2 minutes. Our preferred brand of mozzarella is Dragone Whole Milk Mozzarella. Part-skim mozzarella can also be used, but avoid preshredded cheese, as it does not melt well. I found this on Whole Foods Website. I have become a quinoa cooking fanatic as it's a complete protein with all essential amino acids and very high in protein. I have made this recipe several times and not only does it look beautiful, people love it! I made it first for Thanksgiving but now make it when I am baking a chicken or roasting a meat. I'm making it next week for Easter as well - it's beautiful as a side dish. I am not a huge squash lover but the quinoa stuffing makes a perfect combination of delicious! It does take some time to assemble and cook but - it is even better as a left over so I often double the recipe. This recipe combines favorite fall vegetables with one of our favorite gluten-free grains. Use both white and red quinoa for a rich autumnal color. |

| Summary | This is a very easy recipe with tons of flavor. I find I make this recipe a lot because it's easy and healthy. The hardiest part if peeling the butternut squash but many grocery stores sell them already peeled and chopped. My slow cooker seems to cook this faster than the recipe says -so you might need to watch it the first time to figure out how long yours takes. Trader Joes has a "harvest grains blend" of Israeli couscous, orzo, baby garbanzos and red quinoa - which is this recipe is very good over instead of just plain couscous. |
