Pineapple Coconut Smoothie
My husband has been coming through and making breakfast on Saturdays lately. I love this! This week he made a smoothie which needs to be recognized. This frozen smoothie is vegan as it is dairy free and actually made with coconut. It doesn’t look dairy free but it is. He simply fired up our Vitamix blender and made this amazing smoothie. So yummy and worth making.
Pineapple Coconut Smoothie

A spectacularly yummy dairy free frozen smoothie! Sweet pineapple, nutrient coconut, some protein powder and you are ready to go for a healthy complete breakfast or snack.
Ingredients
- 8oz of cold water
- 8oz cup of ice cubes
- 5 heaping tablespoons of coconut shreds
- 1½ cups of fresh pineapple chunks (include any juice)
- 1 heaping teaspoon of honey
- 1½ scoops of vanilla protein powder
Instructions
- Add water and coconut to Vitamix blender and blend until smooth. This creates your coconut milk. We believe making coconut milk is more healthy this way as there are no other additives.
- Add remaining ingredients and blend until frosty and thick. Add more ice as needed for thickness.
Notes
Serve in an attractive glass with a strawberry on the rim of the glass.

and here i thought that since i had the gastric bypass i would never be able to drink pina coladas ever again!!! thank you for posting this! i am puertorrican and we make pina coladas with coconut cream and that is so high in added sugar that it would probably send me to the hospital.

Well I am here to tell you that as a gastric bypass patient I am a dumper and this smoothie although rich was not on the too sweet side. And it did taste like a pina coladas!!! Enjoy!! I suggest the coconut shreds and water to make the base liquid!!

The Vitamix does get rid of the coconut shred texture, correct?! I love the flavor of coconut, but not the texture of it. This sounds so yummy, will have to try it once I get to the stage I can have those things again!
