Hi Debi, I usually make these crust-less if I am going to eat them. I make them for Christmas morning. I make them the day before and then warm them up as soon as we get up so at least there is some good food going into the boys bellies while we are celebrating Christmas presents. I can eat 2 of them. I don’t have issues with fat if eaten with protein. You have to eat what is right for you. Everyone has different reactions to foods. And especially considering where you are in the process foods are handled differently. My Sassy Girl Kitchen site is not WLS specific. I post all my recipes here. Try crust-less quiches there is less fat.
