Flank Steak with Peppers and Onions

flank steak 208x300 Flank Steak with Peppers and OnionsI made Flank Steak for the boys this weekend. I’m always trying to keep things interesting. You know I try to make something new every once in a while. I have to say I’ve never made flank steak but when I was inspired by some recipes I read and I saw that they were slow cooking the flank steak, I said “that’s for me!” I love slow cooking, it just works for me especially on the weekends. So I’ve been playing with this recipe and the flavors. I’ve finally have it and the flavors are what I know my boys like. So here is my take on slow cooked flank steak. 

Flank Steak with Peppers and Onions

Cook Time: 1 hour 30 mins
Total Time: 1 hour 40 mins
Serves: 4
Ingredients
  • 1.5 lb flank steak
  • 1 28oz can diced tomatoes, drained
  • 1 large onion, cut in half and then into strips
  • 1 large red Bell pepper, sliced into strips
  • 1 1/2 tsp chili powder
  • 1/4 tsp ground cinnamon
  • 1/2 tsp both, Kosher salt and pepper
Instructions
  1. In a large slow cooker or dutch oven, combine the tomatoes, onion, bell pepper, chili powder, cinnamon, 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  2. Nestle beef into wet ingredients in slow cooker or dutch oven. Arrange vegetables with meat until meat is coated.
  3. Cover and cook for 1.5 hours on high or 3 hours on low if using a slow cooker. If using a dutch oven place in a pre-heated 280 degree oven for 1.5 hours
  4. When finished uncover and toss lightly the meat and vegetables before serving.
Serving Suggestions

This is a very aromatic dish and can be served over rice. I tend to increase the peppers and onions so that there are plenty of vegetables to serve and it becomes a one pot dish.
