100th day blogJust wanted to share with you Ryan's 100th Day picture.  Recently

Ryan’s Kindergarten class celebrated the 100th day of school.  Ryan is a

numbers guy so this was so exciting to him.  Although we did not have

to do a home project like most of our friends we did do many projects

in school which taught us the feel for what 100 looks like and feels like. 

So with that said, HAPPY 100!

Tonight dinner was quick and easy.  A simple yet very appealing, tasty meal.  It got them running to the table.  A Beef Stir Fry.  I've made this meal a few times and each time I love it more.  I love it because it is easy and I love it because it tastes so good.  Only three ingredients.
1 1/2 pounds Sirloin strip
2 large Red Peppers
1 large sweet onion

Yup, that's it.  Well I guess you need your usual olive oil, salt and pepper.

I bought sirloin strips you can asked the butcher to cut it into smaller pieces.  Me, I used my favorite  Santoku Knife and cut the strips into smaller bit size pieces.  Sprinkle the sirloin with salt and pepper.

Skin your onion and cut it in half.  Standing on its end, cut one half of the onion top to bottom to create a moon shape strips of onion.  Do this with both halves. Set aside.

Cut our peppers in half, remove the sides and insides.  trim off any white veins.  Now, take halves and slice long thin strips until you have slices entire half of pepper.  With the long thin strips together make one slice and cut them in half. Set aside.

The objective of your cutting is to pretty much make everything about the same size.  This is so cooking occurs evenly.

Now, heat a larger skillet to medium heat then add about 2 tablespoons of olive oil and raise the heat to medium high.

When oil is hot add the sirloin and cook quickly, tossing so to brown on all sides.  The objective is to partially cook the beef.  You want it to be a little under done.  Now remove the beef from the pan and set aside.

While the pan is hot, add your onions.  Spread evenly on the bottom on the pan and let cook.  After a minute or so toss and let sit again.  The trick with onions is to let them cook and not to touch them too much.  

Once onions are just starting to look lightly brown and yummy, add your red peppers.  Toss onion and peppers, let them cook, and toss as needed.  Cook until peppers are just starting to soften but are still crunchy.  At this point add the sirloin back to the pan.  Toss sirloin with veggies and let cook, sprinkle with salt and pepper.  You will only need to cook an additional two minutes or so dependent on how you want the beef cooked.  My suggestion is cook only about two minutes, keep in mind the beef will continue to cook even after you turn off the heat.

Its now time to serve and really if you have all your ingredients ready before you start this should take you more then 5 minutes to cook.

Enjoy.  I know this meal brought family to the table who had already decided they weren't going to eat tonight.  But the smell brought them to the kitchen.  This recipe will make four servings.

pumpkin.jpgIt's that time of year again and a matter of fact we've been doing Halloween things since the beginning of October.  But this is the pinnacle of the holiday.  The build up week.

We attended a neighborhood party today and it was well done.  Lots of crafts and games for the kids.  There was definitely a lot of effort put into the party for the kids.  My son loved every minute of it.  It was proclaimed the best part of his day at bedtime.
