bad school lunch I wanted to discuss a topic that has recently peaked my interest.  Have you seen Jamie Oliver's recent television show called Food Revolution? 

The show aired last night, Friday March 26th on ABC.  It is produced by Ryan Seacrest who was on Oprah Friday afternoon and discussed the revolution that he and Jamie are trying to start.  It shouldn't be an unfamiliar revolution since Michele Obama has also taken on child obesity in the United States as her focus while her husband is in office.

There is a petition that he has started.  He wants to get upwards of 1 million signatures and plan to take it to the White House.  We need our government to understand that we demand that our children's meals at schools across the country be made up of whole foods not processed foods.

Obesity is an epidemic in our country and in fact child obesity is growing at an alarming rate.  This is the first generation that will NOT live longer then their parents did.  Outrageous!

We as parents can control what type of food our children eat! Start packing lunches if your school is not offering healthy choices. This is not going to change overnight, but we do have a choice.  Show our schools and our government that we do not approve of the processed food served to our children. 

Begin to show your children what the healthy foods are. Pack them in their lunches. Try new things. Spend a little extra time for their sack.

egg sandwich blogI have been wanting to make the perfect homemade egg sandwich for some time now.  Well at least one that I can make quickly in the morning.  When I get something in my head it is stuck there until I prove it won't fly or until I figure it out.  So it's been a silent mission for a while now.

I bought egg rings today. 

I was returning some things to Crate & Barrel and then looked around.  Of course that resulted in some more purchases, one of which were these egg rings.

I had been looking for egg rings for a while.  My idea has been to make the egg sandwich ahead of time, warm it in the morning and GO!

salt.jpgSalt.  It's an ingredient that many of us watch when buying food or preparing foods.  "Oh I try not to eat those they have too much salt!"  "Did you salt this?" We've all heard these statements.

How much is too much? What is the healthy amount for a person to consume in one day?

Today it was snowing like crazy when we woke up.  Although it was already a "no school" day it was just as exciting.  SNOW.  It brings out the best in hibernation from all of us.  Ryan and I had had plans to travel south for the day and visit with some college friends, our annual Martin Luther King day get together. img_2044.jpg But today we wouldn't be going there was too much snow and ice to travel on the roads safely.

So Ryan and I took our time waking up slowly, just lounging around.  He was playing with his Leapster and I with my iPhone.  I was catching up on my Twitter reading and a tweet from @TylerFlorence caught my eye.  Or should I say it caught the attention of my appetite.pancakes.jpg  He had retweeted a link to an article that referenced his signature pancake recipe.  

I think Tyler does a great job creating simple recipes that are hard to mess up.  And are YUMMY!  I must say I dont make pancakes often. I have tried every kind of mix.  And none of them ever meet our taste expectations.  So today I went for it and made them from sctratch using Tyler's recipe.  It made a ton of pancakes

50 ways to use a Grilled Chicken Breast, ok maybe not 50, but here’s my story.  I was surprised the other day when I was at a play date with my four year old grilled chickenand I was talking to a Mom.  We were discussing how she should cook the roast she had purchased for a family Sunday dinner.  Her butcher had prepared a roast about twice as big as she wanted but she bought it anyway.  She was perplexed about how she would use the leftovers.  I was a bit surprised by this.  I have mastered the art of making something from leftover meats.  Sorry that sounded a bit over confident.

One of my busy Mom strategies is to actually have food leftover from my meals!  Yup! I want left over vegetables and meat!  And I will actually cook grilled chicken even though I don't plan on serving it the day I grill it.  Crazy!  Well, not really.

At my house everyone gets packed lunch, so leftovers are many times used as the next days lunch.  I also do some marathon cooking on Sunday for the week.  This way there are foods in the frig to be heated on the nights I am at work late.  I try to make two meals on Sunday for the week ahead.
