Beef Barley Stew (no meat)

Summary I know how could there be no meat in a beef barley soup! Well I wanted to make a beef flavored soup one day and did not have any beef in the house so I improvised. It came out great, everyone loved it.
Prep Time 5 Minutes
Cook Time 1 Hour
Ingredients 3 tbsp of Olive Oil
2 onions chopped
1/2 a 5 lbs bag of Red Potatoes quartered
1/2 small bag baby carrots
2 cups of frozen peas
1 small package mushrooms quartered
2 Boxes of Beef stock (8 cups)
1 McCormick Beef Stew spice packet
1 cup of slow cook Barley
Instructions Saute the onion in olive oil. Add potatoes, cook for a 1-2 minutes. Add Beef Stew packet and toss with onion and potatoes. Add other veggies toss together. Cook 1-2 minute. Then add all the stock.

Simmer for 1 hour or until barley is cooked. Serve with hearty bread! ENJOY
