This was an idea I pulled out of a hat one night.  I needed to make something quick.  I always have eggs and many times when I need a quick meal I make  my Caramelized Onion and Spinach Quiche but I didn’t have the time to caramelize onions.  So I went with tomato slices.  I thought this came out so beautiful.  And Yummy.  Your family will love it.

So if you follow me, you know that we fire up the oven every Sunday morning and cook Bacon.  Yes, we fondly call it Bacon Sunday.  We look forward to it and the thought of the savory smell of bacon lulls us off to sleep on Saturday night.

I hadn’t planned on posting this recipe but when I added a picture of it in my journal blog I received so much feedback from Facebook and Twitter.  So here’s the recipe!  It’s super easy to make and mind you I feel funny calling it a recipe!!

Eggs are a staple in my house.  Deviled eggs are an easy, healthy side dish to bring to a brunch or pot luck dinner.  An easy, protein packed snack.  This recipe can be made two ways.  An original recipe and a blue cheese version.  I love the blue cheese version and everyone will love the twist!
