This was an idea I pulled out of a hat one night.  I needed to make something quick.  I always have eggs and many times when I need a quick meal I make  my Caramelized Onion and Spinach Quiche but I didn’t have the time to caramelize onions.  So I went with tomato slices.  I thought this came out so beautiful.  And Yummy.  Your family will love it.

I cook with ground meat about once a week.  It’s tasty and easy to work with especially when you want to make a protein packed meal.  This weekend I started to make one of my standard ground beef and rice mixtures, maybe a bit boring, until I was inspired by something my husband said to me the other day.  He shared with me that his Mom use to make a Spanish Rice type dish.   Hmmmm Spanish rice.  Then I got my MoJo going and headed to the pantry and here is what the results were.

What do you do when you need to spice up that frozen salmon you have in the freezer?  We like to eat salmon twice a week.  We do this in order to get a good dose of Omega 3 oils.  We try to get as much as we can from what we eat rather than taking supplements.  I figure if we eat salmon twice a week we’d be getting what we need.  We were getting tired of grilled salmon so I tried this new recipe.

flank steak 208x300 Flank Steak with Peppers and OnionsI made Flank Steak for the boys this weekend. I’m always trying to keep things interesting. You know I try to make something new every once in a while. I have to say I’ve never made flank steak but when I was inspired by some recipes I read and I saw that they were slow cooking the flank steak, I said “that’s for me!” I love slow cooking, it just works for me especially on the weekends. So I’ve been playing with this recipe and the flavors. I’ve finally have it and the flavors are what I know my boys like. So here is my take on slow cooked flank steak.
