Ok so I make soup every week.  What is it about soup?  It is a great lunch food, and in the winter it is very warming, and satisfying.  Nothing like hot soup with a nice crusty bread!  But I think I make soup because it stretches my ingredients.  Funny thing is, this summer I had cravings for soup.  I’d stop at this place near my house for Italian wedding soup when it was 85 degrees out! Go figure.

My recent discovery, or maybe not a discovery but a tip from my sister, is to par boil split breast of chicken.  With this I use the broth for my soups and the meat I have made I use for other dishes AND my soup of the week.  The chicken comes out so tender.  My husband loves it!  When it is cooling I can’t keep him away from it!  He loves to pick at it.

So I use the chicken for burritos and tacos and I also have put it into my chili and of course my soups.  I guess you could use it for chicken salad too and I will do that some time but have not till this point.

Many think that it takes too much time to make soup but that is not the case.  With some fresh vegetables, grain from your pantry and some store bought broth you can make a quick soup in less then 30 minutes.  Some of my favorite soup recipes have been born from throwing together what I had in the refrigerator to make the soup.
